Ingredients

For the Shrimp

  • 1 lb medium shrimp, peeled and deveined

  • 1/2 cup all-purpose flour

  • 1/2 cup cornstarch

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 cup cold sparkling water (or cold soda water)

  • Vegetable oil, for frying

For the Bang Bang Sauce

  • 1/3 cup mayonnaise

  • 2-3 tbsp Scorched Bonnet Sweet Heat Pepper Spread (adjust to heat preference)

  • 1 tbsp honey or agave syrup

  • 1 tsp rice vinegar or lime juice

  • 1/2 tsp garlic powder

Instructions

1. Prepare the Batter

In a bowl, whisk together flour, cornstarch, garlic powder, salt, and pepper. Gradually add cold sparkling water, whisking until smooth but thick enough to coat shrimp.

2. Heat Oil

Heat vegetable oil in a deep pan or fryer to 350°F (175°C).

3. Coat and Fry Shrimp

Dip shrimp into the batter, letting excess drip off. Fry in batches until golden and crispy, about 2-3 minutes per batch. Drain on paper towels.

4. Make the Sauce

In a bowl, mix mayonnaise, Scorched Bonnet Sweet Heat Pepper Spread, honey, rice vinegar, and garlic powder until smooth.

5. Toss Shrimp in Sauce

Place fried shrimp in a large bowl, pour sauce over, and toss to coat evenly.

6. Serve

Serve immediately, garnished with chopped green onions or cilantro, over steamed rice, or as a finger food with lime wedges.
