Crispy Fried Feta with Spicy Tomato

Ingredients
- 200g feta block

2 tbsp. SaltSpring Kitchen Co. Spicy Tomato Savoury Spread
- 1 tsp. fresh thyme
- ¼ tsp. fresh ground pepper
- 1 cup flour (for coating)
- 1 egg
- ½ cup panko crumbs (for coating)
- 1/4 cup olive oil
- 1 pint cherry tomatoes, halved

Pat the feta dry. Cut the block in half and, using a fork or a spoon, gently scrape out a “pocket” in the centre of each piece of feta to allow the Spicy Tomato Savoury Spread to sit. Place the jam in the centre of the feta and gently place the other feta block back on top.
- Set up 3 bowls for the coating process: In the first bowl, place the flour; in a shallow bowl, beat the egg; in the third bowl, add the panko crumbs. Gently coat the feta block first in flour, then dip in the beaten egg, and finally coat with panko crumbs.
- Place a large pan over medium heat and add olive oil. Once hot, place the cherry tomatoes cut side down in the pan. Add the feta in the centre of the pan and cook for two minutes on each side or until golden brown.
- Transfer the fried feta to a serving dish, surrounded by the sautéed cherry tomatoes. Top with flaky sea salt and serve immediately, ideally with crackers and a drizzle of olive oil or additional fresh thyme if desired.
