1 tbsp olive oil
1 small onion, finely chopped
½ bell pepper (red or green), diced
2 cloves garlic, minced
1 tomato, chopped
1 tsp fresh thyme or ½ tsp dried thyme

Directions
Prepare the bake
- In a large bowl, combine the flour, baking powder, sugar, and salt.
- Slowly add water while mixing until a soft dough forms. Knead briefly until smooth.
- Divide the dough into 8 equal balls and flatten each into a round about ½ inch thick.
- Heat oil in a skillet over medium heat. Fry each bake until golden brown and puffed, about 3–4 minutes per side. Drain on paper towels and keep warm.

- Drain and flake the soaked saltfish.
- Heat olive oil in a pan over medium heat. Sauté the onion, bell pepper, and garlic until soft and fragrant, about 3–4 minutes.
- Add the chopped tomato and thyme and cook for another 2 minutes.
- Stir in the flaked saltfish and black pepper. Cook for about 5 minutes, stirring occasionally.
