Yield: 4 flatbreads
Serving Size: 1 flatbread
Prep Time: 15 min (plus 1 hour rising)
Cook Time: 12–15 min
Total Time: ~1 hour 30 min
This gourmet flatbread blends the sweet smoky heat of Scorched Bonnets Sweet Heat Pepper Spread with creamy ricotta, fresh mozzarella, and slow caramelized onions. Finished with fresh herbs, it balances spice, sweetness, and richness on a crisp golden crust. Perfect as an appetizer, shareable dish, or light meal.
Ingredients
For the dough
2 cups all-purpose flour
1 tsp instant yeast
¾ tsp salt
¾ cup warm water (110°F / 43°C)
1 tbsp olive oil
For the toppings
½ cup ricotta cheese
1 cup shredded fresh mozzarella
4 tbsp Scorched Bonnets Sweet Heat Pepper Spread
1 large onion, thinly sliced
1 tbsp olive oil (for caramelizing onions)
Fresh basil or oregano leaves for garnish
Salt and pepper to taste
Directions
Make the dough
- In a bowl, combine flour, yeast, and salt. Add the warm water and olive oil and stir until a rough dough forms.
- Transfer the dough to a lightly floured surface and knead for about 5 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a clean towel, and let rise for about 1 hour or until doubled in size.
Caramelize the onions
- Heat olive oil in a skillet over medium-low heat. Add the sliced onions with a pinch of salt and cook slowly for about 20 minutes, stirring occasionally, until the onions become soft, golden brown, and sweet.
- Preheat the oven to 475°F (245°C).
Shape the flatbreads
Punch down the dough and divide it into 4 equal pieces. Roll each portion into a thin oval or round flatbread on a lightly floured surface.
Assemble the flatbreads
Spread a thin layer of ricotta on each flatbread. Top with caramelized onions and distribute the shredded mozzarella evenly.
Warm the Scorched Bonnets Sweet Heat Pepper Spread gently so it becomes easier to drizzle, then spoon about 1 tablespoon over each flatbread. Season lightly with salt and pepper if desired.
Bake
Transfer the flatbreads to a baking sheet or pizza stone. Bake for 12–15 minutes until the crust is golden and the cheese is melted and bubbly.
Garnish
Remove from the oven and finish with fresh basil or oregano leaves before serving warm.

🔥 Pro Tip
For an extra crispy crust, preheat your baking sheet or pizza stone in the oven before placing the flatbreads on it. The hot surface helps the dough cook quickly and creates a bakery-style crisp texture.
